Masala filled brinjal curry


Ingredients: Brinjals 8 ( medium size , round ones - preferred )
Rosted ground nut powder 1 cup
Tamrind paste 1/4 cup Garam masala 1 tsp red chilli powder 1tsp jeera 1/2 tsp mustered 1/2 tsp turmeric powder 1/4 tsp Jagaree little Curry leaves Green Chillies ( medium hot ) 2 Coriander leaf Oil ( small cup )
Salt to taste


Method :
Make a paste of ground nut powder, tamarind paste, garam masala, red chili powder and coriander leaves.
Add salt to this and mix well.
Cut brinjals into 4 pieces vertically such that the pieces hold together at one end.
Stuff sufficient paste into the brinjals.
Heat oil in a thick bottom pan, put mustered, jeeta, green chilli, curry leaves, termeric powder.
Next add the stuffed brinjals and remaining paste,
Stir the brinjals till they are fried on all sides.
Tastes good with rotis or with white rice and ghee.
